Anniversary Special Floral Buttercream Cake Recipe

A special anniversary deserves a special cake, and nothing’s better than a floral cake. With a lively look and yummy taste, this cake is going to be a show-stopper for sure. Let’s dive in below to check out the special marriage anniversary cake recipe.

Ingredients

  • 1 and ¾ cups (200 gm) sifted cake flour (spoon & leveled)
  • ¼ tsp baking soda
  • ¾ tsp baking powder
  • 3 large egg whites
  • ¼ tsp salt
  • ½ cup (115 gm) unsalted butter
  • 2 tsp pure vanilla extract
  • ½ cup (120 ml) whole milk
  • 1 cup (200 gm) granulated sugar
  • ½ cup (120 gm) full-fat sour cream
  • ½ cup rainbow sprinkles

Vanilla Buttercream

  • 1 and ½ cups (3 sticks; 345 gm) unsalted butter
  • ⅓ cup (80 ml) heavy cream or whole milk
  • 6 cups (580 gm) confectioners’ sugar
  • ⅛ tsp salt
  • 2 tsp pure vanilla extract

Recipe / Instructions

  • Preheat the oven to 350 degrees F. Oil three 6-inch cake containers and line with parchment paper and oil it.
  • Take a bowl and whisk together cake flour, baking soda, salt, and baking powder. Keep it aside.
  • Utilizing a stand blender fitted with a whisk connection, beat the butter and sugar together on high speed until smooth and rich, around 3 minutes. Scratch down the sides and up the base of the bowl with an elastic spatula. Beat in the egg whites until mixed well, around 2 minutes, and beat in the sour cream and vanilla extract. Scratch down the sides and up the base of the bowl. With the blender on low speed, include the dry ingredients just mixed. With the blender running on low, pour in the milk and blend just mixed.
  • Empty the batter uniformly into the cake containers. Bake for around 18 to 20 minutes or a toothpick inserted in the centre comes out clean. Let the cakes cool for 5 minutes in a container and then invert on a wire rack to cool off totally.
  • To make icing, take a big bowl and utilize a stand blender fitted with a whisk connection, beat the butter on medium speed until rich, around 2 minutes. Include confectioners’ sugar, salt, vanilla extract, and heavy cream with the blender running on low. Speed up and beat for 3 minutes.
  • To assemble the cake, using a big knife, cut a thin layer off the top of the cakes to make a level surface. Place a cake layer on your cake stand. Equally spread the top with around ¾ cup of icing. Top with a second cake layer and equally spread the top with around ¾ cup of icing. Top with the third cake layer. Spread the icing on top and sides of the top cake. To make the floral designs, divide the remaining frosting in 4 bowls and use different coloured food colouring gels. Now with the help of star piping tip and piping bags, make the floral designs as you want.
