Azerbaijan’s famous kukyu scrambled eggs! One of the best options for scrambled eggs -similar to an Italian frittata and French herb omelet, but due to the higher proportion of herbs in the recipe, it tastes much more interesting.
- Fresh cilantro (coriander) 30 g.
- Spinach 90 g.
- Parsley 30 g.
- Green onions 30 g.
- Fresh mint 10 g.
- Chicken egg 8 pieces.
- Natural yogurt 250 g.
- Thyme to taste.
- Cherry tomatoes 300 g.
- Butter 30 g.
Step no. 1
Wash the spinach leaves, remove the stems if too thick, then finely chop them using Chef knives sets. Remove the stems from the parsley and red peppers and chop them as well. Do the same with the mint leaves, you can also remove the white parts of the green onions and chop them. Spinach should be about three times the size of other vegetables.
Step no. 2
Take a pinch of thyme leaves and mix it with curd and lightly beaten eggs. Season the mixture with salt and pepper and add all the chopped vegetables.

Toss cherry tomatoes (optional step) in olive oil and bake for 20 minutes.

In a deep pan, saute finely chopped garlic in melted butter. Put the egg, curd, and herb mixture in a single pan and put it in the oven (180 degrees) for about 15-20 minutes.

Garnish the prepared green kyukyu omelet with boiled tomatoes and serve. By the way, tomatoes can be added to the vegetable mixture before cooking, but then they will break the color dominance of the kyukyu.
